My previous mother in law would make ham with a coke gravy/ glaze. It was amazing, I wish I knew how she did it. I would imagine she has passed by now. It is unfortunate, they blamed me for what happened so our relationship went south. I made this last weekend, I loved it, wife and kids not so much.... meant more for me.
Szechuan Beef Pasta
Ingredients 1 lb ground beef 1 1/2 cups chopped onions 2 teaspoons minced garlic 1 1/2 teaspoons minced fresh ginger 1 teaspoon crushed red pepper 2 tablespoons sesame oil 2 tablespoons cornstarch 3/4 cup beef broth 1/3 cup hoisin sauce 2 tablespoons soy sauce 8 ounces vermicelli, cooked 1/2 cup sliced green onion
Preparation Prep time: 25 min | Servings: 4-6
1. Brown ground beef in a large skillet, stirring until it crumbles; drain and keep warm.
2. Pour sesame oil in pan and heat until hot. Saute onion, garlic, ginger and red pepper in hot sesame oil until onions are tender.
3. Combine cornstarch and beef broth, whisking until smooth. Stir broth mixture, hoisin sauce, and soy sauce into onion mixture. Bring to a boil, stirring constantly; boil, stirring constantly, 1 minute. Stir in ground beef.
4. Toss the Szechuan beef with hot cooked pasta, and sprinkle with sliced green onions. It came from cozi.com

1 lb ground beef 2 -3 stalks celery , chopped 1 small onion , chopped 1 (8 ounce) can tomato sauce (I substitute Whiskey Willie's Bloody Mary mix here) 1/4 cup ketchup 1/4 cup barbecue sauce 1 tablespoon firmly packed brown sugar 1 teaspoon dry mustard salt and pepper 1 tablespoon Worcestershire sauce 1 tablespoon vinegar
In a large skillet, brown ground beef, celery and onion.
Stir in remaining ingredients, simmer covered, 15-20 minutes, stirring occasionally.
If Joes appear too 'loose', leave cover off and let moisture evaporate.
Cook until it's the consistency you like.
We like open face style, less mess.
They always taste better to me when we have leftovers, IMHO. This recipe is easy to double triple etc. The Joes freeze very well.

I may be getting older, but I refuse to grow up.

Seeing as how I'm batching for the next month, as the wife is in El Salvador, I'm back in the kitchen concocting up a man's meal.
Last night's supper.
Beef steak, braised and then slow cooked in a Cream of Mushroom sauce, with Louisiana Hot Sauce, Lea and Perrins Worcestershire sauce, and Montreal Steak spices. Cooked slowly for 4 hours until the meat was so tender.
Baked potato with melted butter and Lawry's Seasoning.
Steamed whole green beans.
Topped off with a piece of pecan Pie.
At my age, who cares about calories, chloresterol or triglycerides. It tasted damn good, and I enjoyed it.

I LOVE patty melts. This is an alternative recipes that fits our low cal diet.
Ingredients
1 teaspoon olive oil 1 cup vertically sliced Vidalia or other sweet onion 1/4 cup part-skim ricotta cheese 1 1/2 teaspoons Worcestershire sauce 1/2 teaspoon black pepper 1 pound ground turkey breast 1 large egg white Cooking spray 4 (1-ounce) slices reduced-fat Swiss cheese 4 slices light rye bread 1/4 cup country-style Dijon mustard
Preparation Heat oil in a large nonstick skillet over medium heat. Add onion to pan. Cook 5 minutes or until lightly browned; stir occasionally. Transfer onion to a bowl.
Preheat broiler.
Combine cheese and next 4 ingredients (through egg white). Divide turkey mixture into 4 equal portions, shaping each into a 1/2-inch-thick patty. Return pan to medium heat. Coat pan with cooking spray. Add patties to pan; cook 4 minutes or until brown. Turn patties over; cook 1 minute. Top each patty with 1 cheese slice; cook 3 minutes or until cheese melts and patties are done.
Place bread slices in a single layer on a baking sheet; broil 2 minutes or until toasted. Spread 1 tablespoon mustard on each bread slice; top each serving with 1 patty. Divide onion mixture evenly among sandwiches.

Sort of a tapas style supper tonight...
Coconut shrimp, salmon feta spinach sliders, edamame beans and spring rolls.
All these years Pete and I have been together I never knew he liked coconut shrimp. Easy to make and yummy! I am not sure he has had edamame beans but anything you can put butter and garlic on can't be bad ;)
