Supper last night--Angus New York steaks, bacon wrapped and nicely seasoned.  Unfortunately, it was below freezing out and the wind was blowing, so I couldn't use the grill.  Tasted pretty good done in the cast iron skillet, though.

Looks awesome!!  I've cooked steak on the cast iron skillet, it's really a good alternative.

I love my steak "blue" so it doesn't take much effort.

I had some type of gruel compared to that ;)

I didn't take photos, so I don't know if you guys are like "No pics, it didn't happen" types, but I had(not am a) squid, tofu, rice and warshed it down with.......

We call this the Lake Panasoffkee special. It’s turkey, cranberry sauce, Colby jack cheese and stuffing wrapped into a tortilla. We added some We went high brow and added some Wensleydale cranberry cheese as well.

I substitute Gruyere cheese for the Swiss cheese.  I prefer the tanginess over Swiss. 

Tonight it was served with asparagus. I like it with roasted Brussel Sprouts as well.   Pete will have leftover over mashed potatoes.

Once you're "inside" you can order from a most reasonable menu of some of the best food the MidWest has to offer. Pictured here is a tenderloin. Stick a bun on top and it becomes a sandwich! Today I had an hamburger who's meat came from a farm just down the road. MMMMMMMmmmmmmm GOOD!

Ok, one more from the tri-state area (Illinois, Missouri, Iowa).
This photo is of a MaidRite. The restaurant has been in business since 1928 and is unique to this area. The recipe for this "loose meat sandwich" is still a closely guarded secret. So, if you're in the area (Hannibal, MO or Quincy, IL) stop in and have a couple.

Ok, I just found the address to those phenomenal tenderloin sandwiches. The odds are you'll need a GPS to find it as it's a bit out in the sticks but this should get you close.

Since we knew Pete would likely either be in the hospital or recovering from surgery we did our Thanksgiving meal last week.

Today was just another Thursday albeit drooling at everyone’s Thanksgiving dinners!!

I decided to make ribs in the crock pot again. This time I went out on a limb and tried something different. Neither Pete or myself are crazy about BBQ sauce.

I made sweet & spicy ribs, they are wonderful and easy peasy! These are not overly spicy, just right.

Ingredients:

˝ cup water

Seasonings of your choice
I use Jane’s Krazy Mixed Up Salt, garlic, Tony Chachere’s Creole, celery seeds and parsley.

One Tomato Diced

A jar of Tabasco Pepper Jelly

Instructions:

Cut ribs to preferred size. I cut mine into pieces of two ribs and place into a bowl. Season the ribs evenly as you can.

I lined my crock pot with a liner. If you cook a lot in a crock pot, liners are a must. Makes cleanup over in seconds.

Pour the water into the pot. Layer in the ribs.
Toss the diced tomatoes over the ribs. Spoon the jelly over the over ribs. Doesn’t have to be super even because as the crock pot heats up the jelly will melt and run over the ribs.

Cook for 8 hours on low.

They come out as you see…. fall off the bone! Set aside some juices if you are a juice person.

Pete will top off a baked potato with the rib meat. Could be served alone or over rice as well. Use your imagination.

Made my mouth water! I'd guess one could do pork ribs (bone in or boneless) or chicken thighs this way.
I happen to like Tabasco pepper jelly... what a new and unique way to use it.
I gotta try this out.
